We take inspiration from around the world creating lagers from the Czech Republic, bold IPAs and Pale Ales from North America and Porters and a Best Bitter from our own shores. We even brew Imperial Stouts and DIPAs for that something extra.
For each style the process and ingredients are the same; we mash – wet malted barley with hot liquor making a porridge-like consistency; we sparge or lauter – rinse with more hot liquor; we boil the wort, adding hops for flavour and aroma; we chill the wort to 17C for ales and 12C for lagers and finally add the yeast to turn all the sugars into CO2 and alcohol. Each beer is differentiated by the different malted barley, hops and yeast – simple!
